This one will definitely rock your socks off with flavor. I had planned on having pork tenderloin medallions with mashed potatoes, and when I poured on the store bought marinade onto the pork, it smelled more “Italian-ish” than I thought it would. So the thoughts started on what I could do with potatoes to compliment it, because the mashed potatoes did not seem to go with that marinade. Then it came to me…potatoes that are like garlic bread! Easy and tasty!
4 baking potatoes; you will need one potato per person
4 tablespoons butter, melted
1 teaspoon parsley
2 cloves roasted garlic, chopped (powdered garlic works just fine…but add and taste; start with a 1/2 teaspoon before adding more)
1/2 cup shredded parmesan
Scrub potatoes thoroughly, dry, and place in a microwave safe dish. Poke holes all over the potatoes and cook in microwave, on high, for 5 minutes per side. Cooking time total of 10 minutes. When the potatoes are done, a knife should slide right through the center of the potato.
Dont have a microwave or have more time to bake them? Great! Simply place the pierced potatoes in the oven for 60 minutes at 400 degrees. Let cool slightly before slicing in half.
Microwaved potatoes also look a little wrinkly when they come out, so that’s another way to tell they are ready. And yes, that is a Mickey Mouse trivet in case you were wondering…
I let them cool slightly and then slice in half. Preheat the broiler for the oven. If you have settings for the broiler, I used a ‘low’ broiler settling, but high works too, just keep an eye on them so they don’t burn. Broilers are a great cooking tool to have, but they can burn your food to a crisp quickly!
Add the parsley and garlic to the melted butter, and brush onto split potatoes. Then top with cheese and broil until the cheese is slightly browned and bubbly, about 4 to 5 minutes.
Dig in and enjoy!
