This time of year, there are apples everywhere you look. In fact, we have two 5 pound bags in our pantry right now…just waiting to have something delicious done with them! One of my husband’s favorite desserts is apple pie, and when I don’t have time to whip up a gluten free crust, plan B is always apple crisp! This one is SUPER easy.
4 medium apples; diced into 1/2 inch pieces
2 tablespoons brown sugar
1 teaspoon cinnamon
Double or triple the topping recipe from my Rhubarb Apple Bars.
1/4 cup oats added to topping mixture
Preheat oven to 350 degrees. Grease 8 x 8 or 9 x 9 baking pan and set aside.
Combine topping ingredients in a small bowl and set aside.
How do you know if you need double or triple the topping recipe? Easy! How much do you like the topping of apple crisp? I think more is always good, but if you only want a little topping so you can taste more apple, only double the recipe. No one will call the apple police. PROMISE!
Combine apples, brown sugar, and cinnamon, and stir until well coated. If you are feeling a little nutmeg-ish, I also put the tinest bit of nutmeg in the mix as well…but be very careful nutmeg can over power it quickly. I literally do one dash, and that is it. Spread apples in the bottom of greased pan.
Spread topping evenly over apples, and bake for 30 minutes, or until the apples are soft. I test by sticking a knife into one apple piece; if it slides right through, the apple crisp is ready.
Cool slightly, and serve with ice cream!
