The name is, well…..gross, but the reason behind it is solid. These are fridge cleaning out potatoes. Just take whatever leftovers you have, heat them up with some beans, and top baked potatoes. Filling and tasty. What is better than that?
4 potatoes, larger baked size
4 teaspoons olive oil, one for each potato
2 cups baked beans (I use my own baked beans, however, a large can of Bush’s Baked Beans also works!)
1 cup chopped meat (we like chicken, pulled pork, leftover beef roast, leftover ribs, etc. Whatever you want!)
Preheat oven to 400 degrees. Scrub potatoes with a veggie brush, and remove any eyes. Poke holes into the potato all over with a fork. Place in pie plate or baking dish big enough to hold potatoes. Drizzle 1 teaspoon of olive oil and sprinkle salt over each potato. Bake in oven for 1 hour.
No time to wait for potatoes to bake in the oven? I understand! Simply omit the olive oil and salt, and pop the potatoes into the microwave. Cook for 5 minutes on high, flip over, and cook another 5 minutes on high.
While potatoes are cooking, combine baked beans and meat into a sauce pan, and bring to a boil. Reduce to simmer until completely warmed through.
Carefully remove potatoes from oven, and split down the middle. Top with bean and meat mixture, and then shredded cheese, and bbq sauce. Serve and enjoy!
