Creamed Turkey

This one is definitely basic. Its not fancy, and its not much to look at, but its a GREAT way to transform leftovers. My mother used to make this for us and serve over torn up bread, but I always thought it was super tasty over mashed potatoes, so that is how we serve it in our house!


3 tablespoons butter

3 tablespoons flour; gluten free or conventional flour, either works!

4 cups milk; I use skim with no issues


2 cups turkey, chopped into bite sized pieces

Mashed Potatoes; I used re-heated leftovers but instant or from scratch potatoes also work!


Pre-heat a large saute pan over medium, add the butter and flour, and whisk until it forms a smooth paste. Cook paste until light golden brown. Whisk in milk and salt and pepper, and continue to cook until bubbly and thickened.

Add in chopped turkey, and cook until heated through.

Serve over mashed potatoes or torn bread.
