Caprese Salad

Last weekend, we attended our HOA picnic, and we were to bring a side dish or a dessert. I went back and forth on what I was going to make, after all, cookies are super easy from pre-made dough, but I decided to go for it and make a caprese salad. And I am glad I did! The majority of my neighbors brought dessert, which is always good, but caused my salad to stand out even more. There was barely any left over!

I found this FABULOUS recipe with a few modifications- Everything on that blog looks amazing!

Since the bunnies destroyed my herb garden, I subbed in a tablespoon of dried basil, and let it sit in the oil, balsamic, and salt/pepper mixture to re-hydrate. I also used block mozzarella vs fresh (I know, THE HORROR) because I thought it would hold up better in the sun. If it was a dinner at home, I would for sure use the fresh cheese.

Also, the grape tomatoes did not look so hot at my local store, so I used tomatoes on the vine. I diced and tossed them into a colander to drain well before I combined with the cheese and the oil mixture.
