Our usual breakfast rotation is smoothies or egg bake, and cereal on weekends. But every once in a while, I need a change and this hits the spot. It doesn’t look like much, but its full of apple-ly goodness. Don’t like apple pie flavors? Try pumpkin, mixed berries, blueberries….whatever you think sounds good! The packets of instant oatmeal don’t hold a candle to these steel cut oats.
1 cup steel cut oats
4 cups water
1 1/2 cup unsweetened apple sauce
3/4 cup pecans
1 tsp cinnamon
1/4 cup brown sugar (if desired)
The ratio of steel cut oats to water is 1/4 cup oats to one cup of water. If you dont need 4 servings (which really makes about 5) then just adjust the recipe to suit your needs. Easy peasy!
Combine the cup of steel cut oats and 4 cups of water in a large stock pot. You can use a medium size one, but will just have to watch it a little closer to ensure it does not boil over. Bring to a boil, and then reduce to slow and simmer for 30 to 35 minutes, or until chewy. The oats should be soft, but not falling apart. Remove from heat.
Stir in apple sauce, pecans, and cinnamon, and ensure well combined. At this point, 1/4 cup of brown sugar can be mixed in if you prefer sweeter oatmeal. Serve immediately, or separate into microwaveable safe dishes for reheating. I typically reheat my serving of oatmeal for 1:30 to 2 minutes on high and stir before eating.
